  • 1 large dorada or similar fish (approximately 1-1.5 kg), cleaned and gutted
  • 2 lemons, one sliced and one for juice
  • 4-5 cloves of garlic, thinly sliced
  • 2-3 medium tomatoes, sliced
  • A bunch of fresh herbs (oregano, rosemary, thyme)
  • Extra virgin olive oil
  • Salt and ground black pepper, to taste

Preparation Instructions:

  1. Preheat the oven to 180°C (356°F).
  2. Rinse the fish with cold water and pat it dry. Season the inside and outside with salt and pepper.
  3. In the cavity of the fish, add lemon slices, garlic, and aromatic herbs. Sprinkle the rest of the garlic and lemon over the outside of the fish.
  4. In a baking tray, arrange a bed of tomato slices and place the fish on top. Drizzle the fish with olive oil and lemon juice.
  5. Bake in the preheated oven for about 30-40 minutes, or until the fish flesh becomes opaque and flakes easily with a fork.
  6. Remove from the oven and let it rest for a few minutes before serving.Serve
